|Story|| Avocados are one the hottest ingredients in the nation – from the ever-popular avocado toast and guacamole, to tattoos, proposals and more, avocados are a pop culture phenomenon. And while Avocados From Mexico enjoy a significant market share within the $905 billion foodservice industry, there is room to grow. The problem? Many operators view fresh avocados as tough to handle, expensive and labor intensive. Even more, beyond guac and slices, how more innovation can there be? While Millennials love them, are they worth adding to the menu?|
We set out on a journey to inspire chefs across all sectors of the foodservice industry by developing new innovative uses of fresh avocados that allowed operators to experiment with new flavors and menu additions and provide ways to leverage fresh avocados from all stages of ripeness, avoiding any waste.
We discovered a key opportunity with Chefs was to help them add flavor to the menu affordable new ways through sauces that allowed them to experiment with a variety of flavor profiles. SRG led the culinary exploration of more than 100 culinary innovations, showcasing unique techniques and one-of-a kind tastes and flavors through “Saucebilities” content that was used to share and showcase these innovations through print and digital.
|Result||The innovation also appealed to a variety of restaurant types, from fine dining all the way to fast casual operations. The result was an increase in market share to 70%, or 4% increase over two years.|
