Chalet Host

Worked as a chalet host in Courchevel, Morzine, La Rosiere and Les Arcs. Learned cordon bleu standard cooking in Verbier. The most important takeaway was you should always cook lamb with rosemary as opposed to mint! Main responsibility was to ensure the guests had the best week they possibly could whilst staying in my chalet.

Key responsibilities included:
• Lots of cooking, including four course evening meals for up to 20 adults, breakfast for 40 guests, children’s evening meal and an afternoon cake
• Stock control, management and ordering on a weekly basis
• Preparing weekly meal plans
• Providing the guests with a full resort safety briefing and tips on best skiing areas
• Lots of cleaning, including a weekly full chalet clean

Key skills:
• Working under pressure – A kitchen environment is always down to the minutes
• Client relationships – Looking after them every day and being their ‘host’ for the week
• Teamwork under intense stress – Ski resorts are not real life, being away from normality in a holiday environment for 6 months solid is a unique and incredibly stressful experience
• Making a rose out of a tomato and a swan from an apple
• Skiing to a black run standard
